Ingredients

  • 8 oz mozzarella
  • 8 oz Mexican (four cheese blend)
  • 8 oz queso cheese
  • 1/4 cup dill finely chopped

Instructions

  • Mix cheeses together add egg and dill
  • take the dough (you can find recipe the dough on a blog " the best vareniki dough"
  • Divide dough into 2 pieces. Cover the second piece with the mixing bowl and thinly roll the first piece out onto a floured surface to just under 1/5” thickness.
  • Use a 3” diameter round cookie cutter to cut circles from the dough, keeping them as close as possible, place 1/2 tbsp of cheese over the rounds
  • To form pierogi, pull the 2 edges together and pinch tightly to seal. To ensure a tight seal, crimp the edges a second time with a pinch and twist motion.
  • boil water , place pierogi in boiling water add salt on your taste. cook for 10 min
