Sharlotka cake
If you will ask what is the most iconic recipe of Russian Fall recipe that would be Sharlotka, served with a cup of hot tea. My kids can guess that I am making Sharlotka just smell it from the oven. I want to share with you my authentic recipe that gave me my grandma.
Sharlotka Russian cake with apples
Ingredients
- 4 Granny Smith apples—peeled cored, quartered and thinly sliced
- 1 tablespoon fresh lemon juice
- 1 cup sugar
- 1 cup all-purpose flour
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon freshly grated nutmeg
- Zest of half lemon
- Pinch of kosher salt
- 4 large eggs
- 1/2 teaspoon pure vanilla extract
- Powder sugar for dusting
- 1 teaspoon baking powder
Instructions
- Preheat the oven to 350 F.
- Wash, peal and dice apples . Drizzle with lemon juice .
- Separate egg whites from egg yolk.
- WIth electric mixer beat egg whites with sugar to hard pick. Whisk slightly egg yolks with vanilla , cinnamon , nutmeg, and lemon zest.
- Mix together flour and baking powder. Add carefully egg yolks to egg whites and add flour in for steps.
- Grease the bottom and side of an 8-inch springform pan. Pour the batter evenly place apples on the top slightly drown them inside.
- Bake for 40 minutes till cake tester inserted in the center comes out clean.
