Sharlotka cake

If you will ask what is the most iconic recipe of Russian Fall recipe that would be Sharlotka, served with a cup of hot tea. My kids can guess that I am making Sharlotka just smell it from the oven. I want to share with you my authentic recipe that gave me my grandma.

Sharlotka Russian cake with apples

Ingredients

  • 4 Granny Smith apples—peeled cored, quartered and thinly sliced
  • 1 tablespoon fresh lemon juice
  • 1 cup sugar
  • 1 cup all-purpose flour
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon freshly grated nutmeg
  • Zest of half lemon
  • Pinch of kosher salt
  • 4 large eggs
  • 1/2 teaspoon pure vanilla extract
  • Powder sugar for dusting
  • 1 teaspoon baking powder

Instructions

  • Preheat the oven to 350 F.
  • Wash, peal and dice apples . Drizzle with lemon juice .
  • Separate egg whites from egg yolk.
  • WIth electric mixer beat egg whites with sugar to hard pick. Whisk slightly egg yolks with vanilla , cinnamon , nutmeg, and lemon zest.
  • Mix together flour and baking powder. Add carefully egg yolks to egg whites and add flour in for steps.
  • Grease the bottom and side of an 8-inch springform pan. Pour the batter evenly place apples on the top slightly drown them inside.
  • Bake for 40 minutes till cake tester inserted in the center comes out clean.
