Shakshuka
Israel tasty breakfast, spicy start to the day with a pile of pita or challah served on the side. It can be amazing branch lunch or easy dinner recipe.
I love to cook this recipe in the summer , when tomatoes and peppers are full of taste and aroma. You can sprinkle with cilantro and feta on top that will add extra flavour.
Shakshuka
Tasty breakfast, healthy, full of flavor and bring to me summer vibes.
Ingredients
- 3 tablespoons extra-virgin olive oil
- 1 large thinly chopped
- 1 large bell pepper seeded and thinly sliced
- 2-3 garlic cloves thinly sliced
- 1 tbsp of paprika
- 3 plum tomatoes chopped
- ¾ teaspoon kosher salt plus more as needed
- ¼ teaspoon black pepper plus more as needed
- 4-6 large eggs
- 1 cup tomato sauce
Instructions
- Heat oil in a large skillet over medium-low. Add garlic and right after add onion and bell pepper. Cook gently until very soft, about 20 minutes. Stir in paprika and cook 1 minute. Pour in tomatoes and season with 3/4 teaspoon salt and 1/4 teaspoon pepper; simmer until tomatoes have thickened, about 10 minutes. Add tomato sauce and simmer for 2-3 more minutes. Taste and add more salt and pepper if needed.
- Gently crack eggs into skillet over tomatoes. Season eggs with salt and pepper. Cover with lid for 4-5 minutes
