Warm Eggplant Salad
think you know that fact that eggplants love oil, and I love eggplants 😅. So today I was standing and thinking what else I can prepare with this tasty veggies and don’t use a lot of oil to cook them. So if we bake them it will have the same taste but less oil.
Warm Eggplant Salad
Servings 4
Ingredients
- 1 big eggplant
- 1 big bell pepper
- Around 20 cherry tomatoes
- 1 clove of garlick
- 3 green onions
- 1/4 cup parsley
- 1/4 cup dill
- 1/4 cup chopped basil
- 1 burrata cheese or 4 -6 slice of fresh mozzarella
- 1/2 lemon
- 1 tbsp of olive oil
- Salt paper, oregano to the taste
- 1 tsp of tahini optional
Instructions
- Wash veggies, all greenery and lemon
- Cut eggplant in slices
- Cut paper in slices
- Use whole cherry tomatoes
- Place all veggies on the baking pan drizzle with oil add :salt ,paper, oregano
- Put in the oven and bake 385f for 25 min
- Cut finely parsley, dill , basil, green onions
- Shreds burrata over the veggies while they are hot add greeneries
- Squeeze half of lemon over the veggies add one teaspoon of tahini (optional)
- Mixed all together and Bon Apetit.
