Pierogi are filled dumplings of Central and Eastern European origin, made by wrapping unleavened dough around a savory or sweet filling and cooking in boiling water

Ingredients
- 8 oz mozzarella
- 8 oz Mexican (four cheese blend)
- 8 oz queso cheese
- 1/4 cup dill finely chopped
Instructions
- Mix cheeses together add egg and dill
- take the dough (you can find recipe the dough on a blog " the best vareniki dough"
- Divide dough into 2 pieces. Cover the second piece with the mixing bowl and thinly roll the first piece out onto a floured surface to just under 1/5” thickness.
- Use a 3” diameter round cookie cutter to cut circles from the dough, keeping them as close as possible, place 1/2 tbsp of cheese over the rounds
- To form pierogi, pull the 2 edges together and pinch tightly to seal. To ensure a tight seal, crimp the edges a second time with a pinch and twist motion.
- boil water , place pierogi in boiling water add salt on your taste. cook for 10 min
